31 Dec 15-Minute Vegetarian New Years Appetizer Platter

15-Minute Vegetarian New Years Appetizer Platter If you're like me, you tend to wait until the last minute to do a lot of things. Like making an hors d'oeuvres platter for New Years eve the night before since you have to work right up until party time, or creating the content for a meatless Monday post right as the sun sets on your Monday. In this case, both are colliding so I decided to create something spectacular that will take you no more than 15 minutes to put together (so you'll have tons of time to get all fabulous before the big night). The surprising and complex flavors of all three of these dishes will wow your friends and make you look way fancier than you actually are (so you can sit back and drink copious amounts of champagne while everyone sings your praises instead of slaving in the kitchen and...

24 Jun Ricotta Crostini

Ricotta Crostini Yield: About 24 Crostini Cook Time: 30 Minutes I love appetizers, so much beauty and deliciousness in one to two bites (and who doesn't love eating things with their hands? )  When eating out, small plates and apps are one of my favorite ways to try a bunch of different things at a restaurant. When cooking, they are a fun way to experiment with new flavor combos.  These crostini are a great way to start off a dinner party while your guests wait for the main event, or a shining star for a cocktail party. My recipes listed here are just a sample of the unlimited possibilities,  get creative and play around with different cheeses, breads, spices, and toppings! Enjoy! xo Stephanie     Ingredients Crostini 1 French Baguette, sliced diagonally and cut in half 1/2 Cup Extra Virgin Olive Oil 1 Teaspoon Kosher Salt   Toppings Apple Honey Hazelnut Crostini Zest from 1 Lemon to Garnish 1/4 Cup Toasted Hazelnuts 1 Apple, thinly sliced Honey Lemon Ricotta Base   Basil...

01 Apr Hippie Hash

Hippie Hash Yield: 4 Servings Cook Time: 40 minutes While in college at The University of Michigan in Ann Arbor, the Fleetwood Diner ("The Hippest Little Diner in Michigan") was our go-to Sunday morning tradition to help cure our inevitable hangovers. Every single time, I ordered their incredible Hippie Hash- a griddle combo of hash browns, tomatoes, onions, mushrooms, and broccoli topped with a generous portion of feta. The addition of feta to hash browns was a life altering food discovery for me, and to this day whenever I end up out for breakfast I make a special request for feta on top of whatever hash the restaurant offers. When at home, I whip up this slightly more refined version of Fleetwood’s college student favorite.     My recipe calls for using one frying pan or griddle to cook (most of) the veggies in steps, so it’s not exactly a breakfast in a hurry recipe. I...
