Ingredients

1 Cup Green Beans

½ Cup Cooked Shelled Edamame

1 Bunch Thin Stemmed Asparagus

1 Cup Broccoli Florets

½ Cup Shelled Fresh English Peas

1 Cup Arugula

1 Avocado, Diced

1 Cup Pesto (See the Recipe Here , Vegans- sub nutritional yeast for the parm)

Juice from 1 Lemon

¼ Cup Pistachios

2 Tablespoons Lemon Zest

1 Tablespoon of Chives, thinly sliced

¼ Cup of Micro Basil (optional)

Pistachio Oil (optional)

Kosher Salt

2 Tablespoons Extra Virgin Olive Oil

1 Package of Whole Wheat Couscous

Directions

Cook couscous according to package instructions (super easy, only 5 minutes!)

Blanch your asparagus (1 minute), broccoli (2 minutes), fresh peas (2 minutes), and green beans (2 minutes), one at a time so you can keep them separate for the next steps, re-using the same boiling and shock water (adding ice as you go if it heats up). (Learn How Here)

Toss asparagus with 1 Tablespoon of EVOO and 1 teaspoon Kosher Salt, roast in a 475 degree oven for about 6-8 minutes, until they turn golden brown in spots (longer for thicker stalks)

Pre-heat a grill pan on high heat, toss Broccoli with 1 Tablespoon of EVOO, grill for about 5 minutes until nice grill marks form.

Toss Couscous in a large bowl with the first 9 ingredients. Salt to taste. Plate and garnish with lemon zest, chives, micro basil, and pistachios. Drizzle with Pistachio oil and serve with luv!
