Halloween is in the air and we all know how quickly the candy induced sugar overload can take over. Why not make some healthy treats this year with my raw and vegan caramel apples. Quick, easy, and no need to bake (though you can, and they are damn delicious that way), they will make both kids and adults smile a big fat one. Stay spooky my friends!


Inside Out Raw Vegan Caramel Apples

Raw Vegan Caramel
  1. 1 cup Medjool dates, pitted and soaked in hot water for a half hour
  2. 1/4 cup maple syrup
  3. 3 tablespoons almond butter
  4. 1 tablespoon coconut oil
  5. 1 teaspoon vanilla
  6. 3 tablespoons almond milk
  7. Pinch of sea salt
  1. 1/2 Cup TOASTED Oats
  2. 1 Tablespoon Honey
  3. 1 Tablespoon Coconut Oil
  4. 1 Tablespoon Toasted Pecans
  1. 3 X-LARGE Fuji, Gala, or Honeycrisp apples
  2. 3 medium apples, any kind
  3. 1 Tablespoon fresh squeezed lemon juice
Make your Caramel
  1. Place all ingredients in a high powered blender or food processor and mix on high until a smooth caramel forms, adding almond milk if needed to keep motor running.
  2. Place in a piping bag or ziplock baggie and set aside.
Make your Crumble
  1. Toss ingredients in a bowl until completely coated in coconut oil and set aside.
Prep your Apple
  1. Slice off the top of your large apple, to create a flat top.
  2. With your knife, cut around the inside of the apple from the top, leaving a sturdy wall around the outside.
  3. With a spoon, hollow out your apple like you’re carving a pumpkin. Scoop out the flesh on the inside of your cut, scooping toward the center instead of toward the skin (this will prevent you from your spoon slipping and cutting through the outside of the apple.
  4. Remove the seeds and tough area around the seeds, then roughly chop the flesh. Place in a bowl with a squeeze of lemon juice.
  5. Finely dice your small apple, leaving on the skin. Toss with the flesh from the big apple.
Putting it All Together
  1. Toss about 1-2 tablespoons of your caramel with the apple flesh. Stuff the flesh inside the hollowed out apple.
  2. Top with crumble. Squeeze caramel over top the apple in whatever design you desire!
  1. You can bake these apples as well, just leave off the crumble caramel until you take it out of the oven. Cook in a 350 degree oven for 15-30 minutes (depends on your apple size) until soft and warm. Add the crumble during the last 5 minutes of bake time, then top with caramel while apple is still hot.
