Curried Avocado Toasts with Lime and Mustard Seed

During a recent trip to New York, I was lucky enough to eat breakfast at The Butcher’s Daughter, a vegetarian cafe that knocked my socks off with every single dish and drink that was brought to the table. My favorite: the avocado toasts. The combination of curry, lime, and mustard seeds breathes new culinary life into the standard avocado toasts I’ve tired of over the years. Immediately upon my return I started to deconstruct their dish and have come up with a recipe that makes me not have to fly back to Manhattan for breakfast. My new go-to quick and easy breakfast food, they are perfect for pre-activity energy or to take on the day with something satisfying yet healthy. Be sure to choose excellent artisan bread (I love using whole wheat country loaf with tons of nuts and seeds and sliced thick) and perfectly ripe avocados. For extra protein, top with a poached or scrambled egg.

Ingredients
  1. 1 Large HaasAvocado
  2. 1 Tablespoon Curry Powder
  3. 1 Large Lime, Juiced
  4. 1 Teaspoon Sea Salt
  5. 1-2 Teaspoons High Quality Extra Virgin Olive Oil
  6. 1 Teaspoon Mustard Seeds
Instructions
  1. In a cup of hot water, soak your mustard seeds.
  2. In a bowl, mash your avocado with your fork (leave some small lumps, it should be chunky) and stir in lime, salt, and curry powder. Mix well.
  3. Toast your bread to desired crispiness.
  4. Drain your mustard seeds.
  5. Divide your avocado mix and spread on each slice of toast.
  6. Drizzle each slice with olive oil, top with mustard seeds, and sprinkle with more salt if desired.
