Chocolate Avocado Pudding and Avocado Cheesecake Trifle

This no-bake dessert in a jar is super easy and out of control delicious. The flavor of the avocado is very subtle, but they lend a creamy and luscious texture that cream and eggs would normally provide in a pudding and a bright green color and faint nutty taste to the cheesecake filling (all the while providing some extra nutritional goodness not normally found in desserts!). Make sure your avocados are very ripe (a great way to use up avocados on their last legs) so they blend smoothly into the fillings and try to use a high quality cocoa powder for the pudding (it will make or break your pudding). Enjoy!

Avocado Pudding Ingredients
  1. 1 Avocado
  2. 1/4 Cup Agave
  3. 1/4 Cup High Quality Cocoa Powder
  4. 1/4 Cup Almond Milk (Coconut Milk, not canned but in the carton, is great too)
Avocado Cheesecake Filling Ingredients
  1. 1 Avocado
  2. 1/2 Cup Sugar
  3. 8 Ounces of Whipped Cream Cheese
Layer Ingredients
  1. Cinnamon Graham Crackers, Crumbled
  2. Whipped Cream
Directions
    Make your Avocado Pudding
    1. Combine all ingredients in a food processor.
    2. Mix until smooth and uniformly chocolaty brown.
    3. Scoop with a rubber spatula into piping bag.
    4. Clean out your food processor bowl.
    Make your Avocado Cheesecake Filling
    1. Combine all ingredients in a food processor.
    2. Mix until smooth and uniformly bright green.
    3. Scoop with a rubber spatula into piping bag.
    Crush your Grahams
    1. In a plastic bag, crush your pecans with fist, heel of your knife (careful!), rolling pin, can, or hammer (pretty much any heavy non-fragile object, i.e. avoid glass jars).
    Make your Trifle
    1. Layer your pudding, cheesecake, and grahams in whatever order you’d like.
    2. Top with whipped cream and garnish with graham cracker.
    Notes
    1. Experiment with different types of cookies (shortbread, chocolate chip, ladyfingers Oreos, the possibilities are endless!) or rounds of cake. Play with spices. The pudding is amazing as a Mexican hot chocolate flavor- a teaspoon cinnamon, a pinch of cayenne, and a dash of vanilla extract. Love mint and chocolate? Try using Thin Mint cookies, a teaspoon of mint extract in the pudding or cheesecake and garnish with fresh mint leaf. Love salted caramel? Use sugar cookies and spread a layer of caramel in-between every other layer and drizzle on top with a big pinch of sea salt.
    2. Vegans, use Tofutti cream cheese and non dairy whipped cream (coconut whipped cream is pretty amazing!)
    3. Substitute Cacao Powder for the cocoa for a Raw dessert!
