Recipe #2 in my Super Bowl series for Fox Sports​, this time it’s one for my family’s home team: the Carolina Panthers! This Hot Pimento Cheese n’ Collards Dip is a spin on one of my favorite dishes from home: pimento cheese! This gooey dip brings a bit of the south to that traditional baked artichoke spinach dip you’re used to – and it’s super easy to whip together for a crowd (and totally healthy with all those collards, right?)

Ingredients
  1. 2 tablespoons butter
  2. 1 cup diced sweet onion
  3. 1/2 pound fresh collard greens, stems removed and chopped
  4. 3 cloves garlic, minced
  5. ½ teaspoon sea salt
  6. 1 8-ounce package whipped cream cheese
  7. ½ cup sour cream
  8. ½ cup mayo
  9. 1 tablespoon dijon mustard
  10. 1 teaspoon mustard powder
  11. 4 ounces diced pimentos, drained
  12. 3 cups cheddar + 1 cup cheddar
Serve with
  1. Celery, Ritz, or Club Crackers
Instructions
  1. Preheat oven to 400 degrees.
  2. Melt butter in a cast iron skillet over medium-high heat, add onions and saute until golden, about 5 minutes. Stir in collards and cook for 2 minutes until wilted. Stir in minced garlic, season with salt and turn off heat.
  3. Combine cream cheese, sour cream, mayo, mustards, pepper, pimentos, and 3 cups of the cheddar in a mixing bowl and stir to combine. Fold in the cooked collards.
  4. Pour mix into a large baking dish, sprinkle the top with remaining 1 cup of cheese, and bake for 25 minutes until hot and bubbly.
  5. FInally, pop it under the broiler for 1-2 minutes to brown and finish the top.
  6. Let sit at room temperature for 10-15 minutes before serving.
