I first experienced wrinkled potatoes, or Papas Arrugadas, at José Andrés' Bazaar restaurant in Los Angeles a few years ago, and they absolutely BLEW MY MIND. My vegan foie gras recipe is one of my most popular and I love love love making it to wow friends from carnivores to meatless crusaders. Using lentils and walnuts as the base with ume plum vinegar as the secret ingredient, it has an extremely rich and umami packed flavor profile that you just can't quit eating til the last finger lick from the jar. This past week I was looking to create a legume free option of that recipe so I turned to the other classic meatless pate ingredient: mushrooms. 09 Mar Natural Products Expo West 2015 Favorites

This weekend I attended the INCREDIBLE 35th annual Natural Products Expo West, the world's largest event devoted to natural and specialty food and beverages, organics, supplements, health and beauty, natural living and pet products. There were over 60,000 attendees and almost 3,000 exhibitors, all badass inspiring warriors determined to change the world through creating and sharing innovative (and really damn delicious) natural products. I tasted what seemed like a million different bites, and while it was impossible to taste everything (I gave up on the hundreds of power bars, chocolates, ice creams and other sweets after the first hour on the show floor) I snapped some shots of my favorite products (and I did forget many when I was in a complete food coma- epic fail/rookie move). I can never get enough kale salad, so I'm always inventing new ways to mix up the same old bowl. This recipe was inspired by my new favorite Venice Beach neighborhood watering hole, Clutch, where their Cali-Mex kale and cauliflower salad transported my tastebuds to a very happy place last week.
